How to clean a banetton proofing basket

Why even clean it?

It is crucial that you properly clean your banneton. Not doing it might lead to the build-up of mold, and let’s be honest, you don’t want that. Also, doing it in an inappropriate manner might damage your basket. Luckily, it is very simple to clean your banneton, and you will only need one tool: a soft kitchen brush.

Cleaning the banneton

To clean your banneton, gently scrub your kitchen brush on the basket until all the dough/flour has come out. If there is excessive dough in any one of the crinkles and you can’t remove it with the brush, then you can take a fork (or anything with a sharp point to it) and gently scrape it off. However, be very careful not to damage your banneton.

It is good that you test the tools you have in hand and decide what fits you the best. Some people prefer to allow the scraps to dry, some prefer to clean it right after using it. All that matters is that you test what works best for you, and that you do it consistently after every use. Also, make you don't damage your product using techniques that are too invasive!

Cleaning the cloth liner

When it comes to the cloth liner, all you have to do is wash it with non-fragrant soap, and allow it to dry completely before using it again. Using fragrant soap might mean your next loaf smells and tastes “soapy”, which is definitely not desirable.
